It’s a hard thing: trying to share chocolate chip cookies.
But do you want to know what’s even harder? Having enough dough left from nibbling to get at least one cookie in the oven. Whenever I make large batches of chocolate chip cookies I can never seem to get the bowl away from grabby hands. I mean every time I turn around someone’s sticking their fingers into the bowl and scooping up a chunk of cookie dough. No matter how many times I say ‘no’ they just keep on sneaking their dirty little paws into my mixing bowl.
But with this cookie I don’t have any issues with anyone trying to steal my cookie dough. You see, it’s a cookie for one.
Yes, your very own cookie that can really qualify as a little cookie pie. And you don’t have to share any of it. Every bit of that cookie, every single chocolate chip is yours and yours alone. No sharing allowed.
Whenever I make this and take my steaming cookie pie from the oven my sister looks at me with wide eyes and always asks me, “Where are the others?” And I proudly dig my spoon into the pie and smile at her. “There’s only one.”
Then we go through the whole process of her asking me to make her a cookie but I just toss the recipe at her and walk away. This is literally the easiest little dish to make, and besides; if I make another one it will be for me.
- 1½ tsp. coconut oil
- 1 tbsp. brown sugar
- 1 tbsp. maple syrup
- ¼ tsp. vanilla extract
- ⅛ tsp. salt
- ⅛ tsp. baking powder
- ½ tsp. almond milk
- 2 tbsp. + 2 tsp. whole wheat flour
- 2 tbsp. chocolate chips
- Preheat oven to 350.
- Add the salt, baking powder, and flour to a small (small small small) bowl and mix well before adding in the rest of the ingredients.
- Place your cookie dough into a small greased ramekin and bake for 8-10 minutes.
- Take out when the cookie looks underdone and let it sit for at least five minutes before eating.
