I found this recipe after watching video after video online looking for a delicious apple pie. After about twenty videos I saw this one and knew I had to get into my kitchen. Mom had just bought a giant bag of nine supersize apples and I knew how perfect my pie was going to be. I have to admit I started doubting the goodness of apple pie when I developed food allergies.
The reason being that almost every store bought apple pie has milk and eggs and I have never had the thought of making an apple pie myself. I guess its because I always make chocolate desserts but wait! I made Apple Pie Cupcakes just a couple weeks ago! I made the cupcake version of apple pie so why didn’t I think of making the real thing?
Ah, well I’ll just have to have a slice of pie to think things over.
I’m not sure if you noticed my lattice pattern being correct. I watched a tutorial and wasn’t sure everything would work but somehow in the middle of cutting dough and wiping flour from my hair the dough kind of got…well…perfect. And that’s not normal. Usually I can’t do anything artsy with pie crusts but this was a special day. I have to tell you I would have just rolled the pie crust over the top of the pie and been done with it if I didn’t have to take pictures of the food.
I was honestly going to skip the pictures since the pie was ready at like 10 p.m. and all I wanted to do was get a spoon and eat it straight from the pan.
Aren’t you glad I didn’t do that? You would have seen photos of a pie plate licked clean. But that’s pretty much what I did the next day when my mom was running errands.
I had pie for lunch.
And a snack.
And for dinner.
Ok, enough talk about my will power which I have none of. I’ll give you the recipe. 🙂
- 2 pre made gluten free pie crusts
- 8-9 medium sized apples
- ½ c. earth balance
- 3 Tbsp. gluten free all-purpose flour
- ½ c. white sugar
- ½ c. brown sugar
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- 1 tsp. vanilla extract
- 3 Tbsp. water
- Peel, core, and slice your apples into thin even slices. Place aside.
- On medium heat, melt butter in a sauce pan. Stir in flour until dissolved. Add in white sugar, brown sugar, water, and vanilla extract. Stir until dissolved.
- Add in nutmeg and cinnamon. Stir until dissolved and bring mixture to a boil. Reduce temperature and allow to simmer for 5 minutes.
- In a 9″ pie pan, place your two bottom crusts and fill with a third of your apple slices. Dollop a ladle in your sauce and coat the bottom layer.
- Repeat the process for the next two tiers of the pie, spreading the sauce evenly over the top each time.
- Roll your remaining doubled pie crust over the top of the apples or lattice it, whatever you want to do.
- Set your oven to 350 degrees and bake on the middle rack.
- This pie should take about an hour to complete, you’ll know it’s done when you can stick a toothpick and puncture the apples inside easily.
- Remove and serve with whipped cream, vanilla ice cream, or just eat it straight from the pan.
I hope you enjoy this pie as much as I did. It’s now my favorite pie. 🙂
