A few months back, Dad bought me my very own waffle iron. That was a very good day. I mean, it’s not like my ultimate happiness depends on a belgium waffle maker…but…c’mon…
Just look what my precious little waffle iron can make:I kid you not when I say we had waffles four times a week at some point when the waffle maker was welcomed into our kitchen. I’m definitely not complaining though; waffles are my jam. Quick story:
At my Nana & Gramps’ house, we had three staple breakfasts’ when we visited.
- Orange cinnamon rolls + eggs + bacon
- Toast + eggs + bacon
- Waffles + eggs + bacon
The waffles were a favourite.
These weren’t just any waffles though. Oh no, these were the waffles. Gramps woke up early enough to make them so when our sleepy, bathrobe clad selves walked into the kitchen rubbing our eyes we would be greeted with warm, fresh, cinnamon-sugar waffles.
Just imagine a toasted waffle with butter, cinnamon-sugar, and syrup first thing on a Saturday morning.
Ah, I get all warm and gooey inside just thinking about it. : )It’s not as fun eating cinnamon-sugar waffles without Gramps these days, so I’ve opted for a different kind of waffle.

Or, if you want to hear the fancified name: Fluffy vegan waffles with drizzled peanut butter and a blueberry reduction.
So, so good. So tasty. So marvelous. THESE ARE SO GOOD!
- 2 c. Aunt Jemima original pancake mix
- 1½ c. almond, soy, or coconut milk
- 2 Tbs. ener-g egg replacer
- 2 Tbs. olive or coconut oil
- (toppings)
- 4 Tbs. peanut butter
- 2 c. blueberries
- ¼ c. water
- 3 tsp. stevia
- Heat your waffle iron.
- In a medium sized mixing bowl, mix together the pancake mix, milk, egg replacer, and oil until just mixed. If needed, grease your iron.
- Scoop out appropriate amount and cook your waffles.
- Meanwhile, make the blueberry reduction. In a small saucepan, combine the blueberries, stevia, and water over medium heat. Using a spoon, mash the blueberries just a smidge. Bring the mixture to a boil, then reduce and let simmer until all of your waffles are cooked.
- In a small bowl, melt the peanut butter. Now comes the fun part. : )
- Put your waffle on a plate. (Is it on a plate? Yes? Good.) Drizzle the blueberry reduction all over that waffle. (Don’t be shy with this, just dump it all over the waffle).
- Now drizzle your peanut butter over the waffle as well. (Time to really shoot for the stars here. Whack that peanut butter all over.)
