Wellza, it’s this lovely little combination of fresh, wholesome ingredients that are mixed together to create an ice cream that is perfectly healthy. You can also eat this for breakfast, which is the main reason for making it, of course. Ice cream for breakfast? Yes, please!

You should have seen the kitchen this morning. I was whipping out ingredients and slicing fruit and tripping over my dog trying to create the perfect banana ice cream. Last week, I was in New Orleans with my ma and sister, and we found some dark chocolate goji berries in the Garden District. I chopped those up and sprinkled them on the ice cream and woah, just woah. They’re crunchy, sweet, and palatable. We also found a plant based restaurant, Seed, which had so much delicious, amazing, beautiful, and vegan food! The three of us ordered the soy nuggets, artichoke cakes, coconut wraps, and sprout sandwiches.
The sprout sandwiches were my favourite, but everything was equally delectable. Our waiter, Claire, was absolutely fantastic!. She made us feel so comfortable and helped us find the best items on the menu. Because the restaurant is plant based, I didn’t have to worry about asking for an allergy menu or check the place ahead of time. I could literally order anything and not have a single care about it hurting me. I haven’t been able to just eat at a restaurant in a long time, and it was such a great feeling.Now, you can’t go to Seed without ordering dessert. My sister ordered the chocolate mousse, but I couldn’t decide between the chocolate cake, cookie, or raw carrot cake. Claire said her favourite would be the cake, so I chose that and couldn’t have made a better choice. We even spread the mousse on the cake and it was mouthwatering. Claire brought out a small sample of the raw carrot cake for us to try and it reminded me of Fully Raw Kristina’s recipe! I’m planning on making some of my own this summer. : )
But back to the Strawberry ‘Nice’ Cream.
- 4 frozen bananas
- 1 c. frozen strawberries
- 3-4 Tbsp. almond milk
- 3 Tbsp. unsweetened coconut
- chopped dark chocolate goji berries
- Toss all of the ingredients into a food processor and blend until creamy. Top with coconut and goji berries if desired and serve immediately.
