This past weekend, my lovely friend Lauren was in town! She’s only a couple hours away, but that still makes it difficult to see each other as often as we want. Every visit we usually hike, bake, or make something creative.
Needless to say, within the first 15 minutes of her stepping foot in my house, we made donuts.Our donut theme song went something along the lines of an Usher song. Lauren tasted the batter and started singing, “Got me like, oh my gosh, I’m so in love…”
Donuts can make a person sing for joy. Especially when they taste so good! I like making most of my baked goods from scratch, but the occasional box mix comes in handy. I found a gluten free cake mix in the store the other day, along with gluten free frosting, and was really interested in how it would turn out since I wasn’t going to use any eggs. Normally, my gluten free recipes are a total flop without eggs. However, these little guys turned out fluffy, moist, and full of rich, chocolatey flavour.
- 1 box Betty Crocker’s Gluten Free Chocolate Cake Mix
- ⅔ c. Water
- ½ c. coconut oil
- 2 tsp. baking powder
- ½ can Duncan Hines’ Gluten Free Chocolate Frosting
- If you have a donut maker, heat that baby up! Mix the cake mix, oil, and baking powder in a small bowl until just mixed. Spoon golf ball sized amounts of batter into the donut maker and bake until the green light comes on—about two minutes.
