I spend a large portion of my summer cooped up by the sunny windowsill, in my flea market armchair, wasting the day away with pinterest and netflix.
I’m perfectly content to relish in the neverending depths of pins and pics when the temperature is a triple digit number, and I rely on my left pinky finger to fall asleep so I know when it’s time to go outside…
But when I go outside, I don’t like taking my gadgets out of the house.
Apparently, it’s a foreign concept to leave your house these days without a cell phone. I, for one, could care less about them. I hear for a 17 year old, that’s not normal.
I don’t like to feel bound by something, especially a tiny electronic box I was given years ago for the sole purpose of calling my mom during my out of town cross country meets.
Dixie’s “Dark for Dinner” commercial sparked an articulated train of thought that quite literally kept me up at night. The fact that a commercial suggests putting away your phone while you’re at dinner with people rattles my brain. We need to be told that? What? It’s been an unspoken rule at our table to eat without phones during dinner, but I presume that’s not the case for others.
Last summer, during one of the groundbreaking times I left the house to socialize with people my age, the first thing I noticed was the abundance of Iphones floating around their hands. There was no room for pauses, no thought to let the moment be without instagramming the event. I made up my mind that night to keep my phone in my purse when I was with these people.
A pinterest quote comes to mind when I recall last summer, and it’s something I occasionally speak to friends, “Be with people who don’t make you want to be on your phone”.Life is more exciting without a phone in hand. You can live more, run more, eat more, and grow more.
Things you can enjoy way more without your cell phone:
1. Dinner. There’s nothing better than honest to goodness conversations with your kin. When you spend time with people who share your DNA, it’s ten times more fun than hanging out with ‘normal’ people.
2. Nature. Leave the camera at home for once and see the world with your own eyes instead of through a lens. Notice the glint of light on broken glass, the rays of sun that shine through bonfire smoke, and the paw prints mapped into the concrete on the sidewalk.
3. Friends. Be with people. Like, actually look them in the eye and talk about more than just the fluff of the day. Learn who they are as a person, what their quirks are, what they dream of becoming, and how many oreos they like to eat.
4. Food. I told my friends once that a dream of mine is to eat alone in a restaurant. Just me and food. No people, no book, no phone. They told me that sounded like the most lonely experience in the world; It’s still something I’d like to do. To sit, relish in the quiet, and enjoy the food without taking snaps of it and sharing it with the world.
So there’s some food for thought.And onto the recipe, there’s nothing quite like a savory grilled cheese. I’m pretty sure every adult you meet loves a homemade grilled cheese sandwich, and adding some avocado doesn’t hurt.
There’s just something great about going back to your childhood when it comes to food. It might be the memories that a childhood favourite evokes, or the comforting flavour from your mom’s special dish.
After watching Mary Giuliani make three different types of grilled cheeses with Ina Garten, I knew I had to get into the kitchen and make something amazing.
- 4 slices sourdough bread
- 2 Tbs. coconut oil
- ½ c. Daiya mozzarella shreds
- ½ c. Daiya cheddar shreds
- ½ tomato
- 1 ripe avocado
- 2 Tbs. (vegan) hickory honey mustard
- Heat a skillet on medium heat.
- Spread the coconut oil on the tops of your 4 slices.
- Spread the honey mustard on the bottom two slices of bread.
- Slice your tomato and avocado, putting both on the two slices of bread with the honey mustard.
- Mix the cheeses together and sprinkle across the bread.
- Assemble into a sandwich and cook on the skillet, about 2 minutes for each side.
- Serve immediately.
