I love cheesecake. I remember after cross country practices I would drive to the grocery store and buy slices of cheesecake for myself. I ended up keeping a fork in the glove department specifically for my treat.
Those days are gone, seeing as cheesecake is made up of literally everything I’m allergic to. However, this tofu stuff creates nearly identical flavours that mimic my beloved dessert.
And when you throw oreos in the mix, I mean, that’s just the cherry on top. Or, in this case, oreo on top.
I have a confession to make. It’s embarrassing, but the first time I made this recipe… I ate the entire pan of these bars. All by myself. In less than a week. You know, after saying that I don’t feel better. I just feel bloated and heavy. So if you make these please share them. I promise dessert tastes better when you share it with someone.
This time around, I made sure everyone tasted these squares. And my family loved them. These bars are really good. Really really good. I’ve warned you that these will make you want to eat the whole pan; are you willing to make them? I think self control might be a slight issue for me when it comes to sweets, so next time I’ll make these for some other lucky duck.
I am ashamed that I ate two of these a day. It makes sense though, with a cheesecake dessert like this, I pretty much went nuts and hid half the pan. HALF isn’t the entire thing. I just split it 80/20 with my family.
Sounds like a pretty fair deal to me.
- 2¼ c. all purpose flour
- ½ c. packed brown sugar
- ¾ c. softened earth balance
- 1 pkg. oreos
- 1 pkg. softened tofutti cream cheese
- ¾ c. sugar
- 3 T. energ egg re placer (don't add water)
- 24 mini Oreo's
- Heat oven to 375 F.
- In a mixer, beat 2 cups flour, brown sugar, earth balance, and oreos on medium speed. Press the mixture with your hands into a 13x9-inch ungreased pan.
- Bake for 15 minutes.
- while crust is baking, beat cream cheese, sugar, remaining ¼ c. flour, and energ egg replacer with an electric mixer on medium speed until thick and fluffy.
- Pour cream cheese mixture over the cookies.
- Bake 12 to 15 minutes or until topping is set.
- Cool for 15 minutes, then refrigerate for 1 hour or until firm.
- Cut into 24 bars an top each with a miniature Oreo.
- Store covered in refrigerator.
