As the third week of school comes to an end, I am left knee-deep in homework and with a dire craving for baked goods. Seeing as I’m a tad bit obsessed with breakfast foods, I knew as soon as I set my backpack down today that I had to make these waffles. The thought came during physics as I poured coffee from my elephant tea pot.
I’ve noticed a few things lately. Such as how running in the moonlight makes it 100x better, inside jokes with your galfriends are totally rad, and waffles are the best ending to an unfavourable day.
Actually that last one’s always true, no matter what kind of day you have.
There’s something about making waffles that soothes the soul. Although, from experience, always grease your iron lest your waffle dreams be wrenched away as you hopelessly try to peel off scraps of waffle from the intricate crevices of your waffle iron.The name of the original recipe was, “life changing pancakes”. That set my hopes pretty high, and let me tell you, these waffles do not disappoint.
They’re light, fluffy, and have little chocolate chips scattered throughout each and every bite. The outside is nice and crispy, while the inside is chewy and bursting with flavour. If I could say that these waffles were the definition of perfection, I would.Paired with fresh strawberries and a couple episodes of Criminal Minds, this sweet potato treat is sure to brighten anyone’s day. Well, that and Spencer Reid. : )
- ¼ c. + 1 Tbsp. cooked, mashed sweet potato
- 1 c. cashew milk
- 1 Tbs. vanilla extract
- 2 Tbs. honey
- 1 c. + ¼ c. almond flour
- ½ c. + 1 Tbs. potato starch (not potato flour)
- 1 Tbsp. + 1 tsp. baking powder
- ½ tsp. sea salt
- 2-3 Tbs. chocolate chips
- I cooked a couple sweet potatoes before hand to make this recipe quicker to make.
- In a food processor or high speed blender, blend together all the ingredients until smooth.
- Transfer batter to a bowl and let set for 15 minutes.
- After 15 minutes, the batter will have thickened slightly, and it's time to make waffles.
- Heat your waffle iron.
- Pour ¼ c. amounts of batter onto your iron and cook about 2 minutes. (I didn't wait for the light, just until the waffles came off the iron easily)
- Top with fresh fruit and serve immediately, no syrup needed!
