Oh, quinoa. I could probably fill a novel with the endless reasons why I love the stuff. It’s such a versatile food that fills your plate while leaving your tummy super satisfied.
One of my favourite dishes with quinoa is this black bean quinoa salad. This recipe is chock full of fresh and flavourful ingredients that will add some colour to your plate.
From the sweet corn, zesty spices, creamy avocado, and hearty beans, there’s a lot to love about this salad.
One of the best things about this salad is how easy it is. You can toss all the ingredients in one bowl, give it a quick stir, and you’re done!
You can eat this as a side dish or, my personal favourite, with a big ol’ spoon straight from the bowl.
- ½ c. uncooked quinoa
- 1 15 oz. can black beans
- 1½ c. corn
- 2 medium avocados
- ½ c. fresh cilantro
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1 tsp. salt
- ¼ tsp. pepper
- Boil 1 c. water and add quinoa. Simmer on low until all water is absorbed. Let cool.
- Rinse and drain black beans.
- Chop cilantro and avocado.
- In a large bowl, add cooled quinoa, black beans, corn, avocados, chopped cilantro, cumin, garlic powder, salt, and pepper.
- Mix until combined.
- Refrigerate and serve!
