This summer, my kitchen looks a bit different as I’ve begun to incorporate eggs and dairy back into some of my recipes. Hosting company means expanding past my good ol’ favourites and trying some new bakes for my guests.
When I came across this citrus loaf I knew I had to jump into the kitchen.
I was hesitant to add the almond extract that the recipe calls for so I halved the amount and the flavour was perfect. The combination of fruity and nutty flavours makes this dish stand out and satisfy any sweet tooth.
This is a lovely loaf to bake for your neighbours, family, or just yourself to enjoy on a summer afternoon in the garden.
Summer Citrus Loaf
Ingredients
- 1 ½ cups all purpose flour
- 1 cup cane sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsbp. lime zest
- 1 tsbp. lemon zest
- ⅓ cup canola oil
- ½ cup almond milk
- 2 eggs
- 2 tbsp lime juice
- 2 tbsp lemon juice
- ¼ tsp almond extract
Lemon/Lime Drizzle
- ¾ cup powdered sugar
- 1 tbsp lime juice
- 1 tbsp lemon juice
- ⅛ tsp almond extract
- ¼ cup slivered almonds
Instructions
- Preheat oven to 325 degrees and line a bread pan with parchment paper.
Loaf
- In a medium-sized mixing bowl, sift flour, sugar, baking powder, and salt. Add zest of both lime and lemon and gently mix with a fork. Set aside.
- In another bowl, whisk together oil, almond milk, eggs, lemon and lime juice, and almond extract.
- Combine wet and dry ingredients and mix gently. Do not overmix or bread will be tough. Pour into your lined bread pan and bake for 55-60 minutes. After 30 minutes, cover the top of your loaf with aluminium foil to prevent too much browning.
- When a toothpick inserted in the middle of the loaf comes out clean, remove loaf from oven and let it rest for 15 minutes.
Lemon/Lime Drizzle
- Whisk together lemon and lime juice with powdered sugar and extract.
- Remove your loaf from the pan and place on a plate. Using the whisk, drizzle the icing over your loaf and top with slivered almonds.
