Honey Banana Bread

Ingredients
  • 2 c. whole wheat flour
  • 1 tsp. baking soda
  • ½ tsp. cinnamon
  • ¾ tsp. baking powder
  • ¾ tsp. salt
  • ⅓ c. soy milk
  • ½ c. honey + 1 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 2 c. packed, mashed banana (I used four bananas)
  • ⅓ c. chocolate chips
Instructions
  1. Preheat oven to 350 F.
  2. Combine dry ingredients, and mix well. In a separate bowl, combine wet ingredients and mix into dry.
  3. Pour into a greased loaf pan and cook 50-60 minutes.
  4. After 30 minutes, cover the top of the loaf with foil and reduce the heat to 300.
  5. Let it cook slowly for the last 30 minutes then when it’s done, flip onto a wire cooling rack and enjoy!
