Apple Cinnamon Pecan Muffins

- 4½ c. freshly milled whole wheat flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. salt
- 2 Tbsp. ground flax seed + 6 Tbsp. warm water
- 3 tsp. cinnamon
- ½ tsp. nutmeg
- 2 c. almond milk
- 1 cup olive oil
- 1 cup honey
- 1 c. chopped pecans
- 2½ c. large apples (green or red, whichever you prefer)
- Peel and cube your apples and set aside.
- Mix dry ingredients in a large bowl.
- Pour apples and pecans into your dry ingredients and coat well.
- This prevents your nuts and fruit from sinking to the bottom of the batter. Add wet ingredients to dry and stir until combined.
- Pour into greased muffin cups.
- Bake at 350F for 20 minutes or until a toothpick inserted in the center comes out clean.
