Apple Cinnamon Pecan Muffins

Ingredients
  • 4½ c. freshly milled whole wheat flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. salt
  • 2 Tbsp. ground flax seed + 6 Tbsp. warm water
  • 3 tsp. cinnamon
  • ½ tsp. nutmeg
  • 2 c. almond milk
  • 1 cup olive oil
  • 1 cup honey
  • 1 c. chopped pecans
  • 2½ c. large apples (green or red, whichever you prefer)
Instructions
  1. Peel and cube your apples and set aside.
  2. Mix dry ingredients in a large bowl.
  3. Pour apples and pecans into your dry ingredients and coat well.
  4. This prevents your nuts and fruit from sinking to the bottom of the batter. Add wet ingredients to dry and stir until combined.
  5. Pour into greased muffin cups.
  6. Bake at 350F for 20 minutes or until a toothpick inserted in the center comes out clean.
