In a medium sized mixing bowl, mix together the pancake mix, milk, egg replacer, and oil until just mixed. If needed, grease your iron.
Scoop out appropriate amount and cook your waffles.
Meanwhile, make the blueberry reduction. In a small saucepan, combine the blueberries, stevia, and water over medium heat. Using a spoon, mash the blueberries just a smidge. Bring the mixture to a boil, then reduce and let simmer until all of your waffles are cooked.
In a small bowl, melt the peanut butter. Now comes the fun part. : )
Put your waffle on a plate. (Is it on a plate? Yes? Good.) Drizzle the blueberry reduction all over that waffle. (Don’t be shy with this, just dump it all over the waffle).
Now drizzle your peanut butter over the waffle as well. (Time to really shoot for the stars here. Whack that peanut butter all over.)
