Everyone loves a good brownie, but sometimes a change from the good ol' chocolate brownie is nice.
Ingredients
1 stick earth balance
1 cup gluten free all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon baking powder
½ teaspoon salt
¼ teaspoon baking soda
⅓ cup brown sugar + stevia
1½ tsp. energ egg replacer + 2 Tbs. warm water
1 cup chopped walnuts
2 large firm-sweet apples (green or red, peeled and cubed)
Instructions
Preheat oven to 350 F.
Grease an 8-by-11-inch baking dish.
Whisk together flour, cinnamon, baking powder, salt, and baking soda in a medium bowl. In a separate bowl, combine together butter, sugar, and egg replacer with until combined.
Add walnuts and apples to the dry ingredients, and stir by hand until combined.
Add wet ingredients, and stir well.
Spread batter in pan, and bake until golden brown and slightly firm, about 35 minutes. Let cool on a wire rack 30 minutes, then cut into 12 bars.
