Avocado Grilled Cheese

Ingredients
  • 4 slices sourdough bread
  • 2 Tbs. coconut oil
  • ½ c. Daiya mozzarella shreds
  • ½ c. Daiya cheddar shreds
  • ½ tomato
  • 1 ripe avocado
  • 2 Tbs. (vegan) hickory honey mustard
Instructions
  1. Heat a skillet on medium heat.
  2. Spread the coconut oil on the tops of your 4 slices.
  3. Spread the honey mustard on the bottom two slices of bread.
  4. Slice your tomato and avocado, putting both on the two slices of bread with the honey mustard.
  5. Mix the cheeses together and sprinkle across the bread.
  6. Assemble into a sandwich and cook on the skillet, about 2 minutes for each side.
  7. Serve immediately.
