Chickpea Cookie Pie

Ingredients
  • 2 cans chickpeas (drained and rinsed)
  • 1 c. quinoa flakes
  • ¼ c. + 3 Tbsp. olive oil
  • 2 tsp. vanilla extract
  • ½ tsp. baking soda
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1½ c. brown sugar
  • 1 c. chocolate chips
Instructions
  1. Preheat oven to 350.
  2. Grease a 9 inch springform pan.
  3. In a food processor, blend everything except for chocolate chips until smooth and creamy.
  4. Fold in the chocolate chips.
  5. Bake for 35 minutes, until a toothpick inserted in the center comes out clean.
  6. Serve warm or cold.
