- 2 cans chickpeas (drained and rinsed)
- 1 c. quinoa flakes
- ¼ c. + 3 Tbsp. olive oil
- 2 tsp. vanilla extract
- ½ tsp. baking soda
- 2 tsp. baking powder
- ½ tsp. salt
- 1½ c. brown sugar
- 1 c. chocolate chips
- Preheat oven to 350.
- Grease a 9 inch springform pan.
- In a food processor, blend everything except for chocolate chips until smooth and creamy.
- Fold in the chocolate chips.
- Bake for 35 minutes, until a toothpick inserted in the center comes out clean.
- Serve warm or cold.
