Gluten Free Chocolate Zucchini Muffins

Ingredients
  • ½ c. almond butter
  • 1 ripe large banana
  • 2 Tbsp. flax seed + 3 Tbsp. water
  • ¼ c. honey
  • ¼ c. unsweetened cocoa powder
  • 2 Tbsp. ground flaxseed
  • 1 tsp. vanilla extract
  • ½ tsp. baking soda
  • 1 c. zucchini, shredded and squeezed of excess liquid
  • ¼ c. chocolate chips, plus more for sprinkling on top
Instructions
  1. In a large bowl, mix together all ingredients until everything is incorporated, and the banana is completely mashed.
  2. Bake at 350F for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
