Gluten Free Chocolate Zucchini Muffins

- ½ c. almond butter
- 1 ripe large banana
- 2 Tbsp. flax seed + 3 Tbsp. water
- ¼ c. honey
- ¼ c. unsweetened cocoa powder
- 2 Tbsp. ground flaxseed
- 1 tsp. vanilla extract
- ½ tsp. baking soda
- 1 c. zucchini, shredded and squeezed of excess liquid
- ¼ c. chocolate chips, plus more for sprinkling on top
- In a large bowl, mix together all ingredients until everything is incorporated, and the banana is completely mashed.
- Bake at 350F for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
