When I first started making my own potatoes, I had no clue as to what I was doing. Absolutely none. Seasonings were a mystery. Cooking time was a myth. The only thing I did know about cooking any kind of potato is that no matter what you’ve done with the spud: butter fixes it.
That was my go-to when I made potatoes. Slather enough butter to stop your heart and the end result is ultimately swell. You can always fix your potato mistakes by mashing them into oblivion. Oh, and adding butter, of course.
However, as I’ve grown older, I’ve picked up a few tricks of the trade when it comes to potatoes. There are lots of different ways to cook a potato.
“boil em, mash em ,stick em in a stew” — you get the jist.
I’ve been cleaning up my diet lately, thus removing unneeded salts, sugars, flours… and so forth.
But I still wanted my potatoes. Without oil and salt, though. I didn’t think there was any possible way to make a potato taste lovely without drowning it in olive oil and suffocating it with salt.
However, I found a way.
Who knew that potatoes could be so delicious without adding anything but spices! You learn something new everyday, I guess. : )
- 2 Idaho potatoes
- 3 tsp. water
- Cracked black pepper
- Red pepper flakes
- Preheat oven to 350. Wash your potatoes.
- Slice into 'chiplets', basically cube the spuds and spread on a baking sheet lined with parchment paper.
- Sprinkle the water over the potatoes along with the pepper and pepper flakes.
- Bake for 30-35 minutes.
- Serve immediately.
These potatoes are so delicious and versatile, you couldn’t possibly go wrong with trying them out. I personally like to toss mine in with some sauteed kale and call it a day.
Drizzling ketchup on the potatoes also makes for a tasty combination.
It’s up to you, though, that’s how easy these are. You can add in whatever spices or herbs you like and the potatoes explode with flavour. These are definitely a crowd pleaser. Much Love,
Katherine Marie
My Bible Verse For Today:
“So I say to you: Ask and it will be given to you; seek and you will find; knock and the door will be opened to you. For everyone who asks receives; the one who seeks finds; and to the one who knocks, the door will be opened.”
Luke 11:9-10

I’m going to cook these right now ! I enjoyed the above article. It made me smile. Your “lord of the rings” quote made me laugh. I don’t usually leave comments but the above was really well written. Simple yet settle. Your way with words ebbs and flows harmonically. Have a good weekend.

Thank you so much! Your comment is so sweet, I hope you enjoy the recipe! (The more red pepper flakes the better, I’d say) 🙂
